Oyster sauce commonly found in stores are made with oyster extracts, sugar, corn starch, and, very often, additives and preservatives - very different from the traditional oyster sauce decades ago.  

Mr. Chen, present owner and son of founder of Yu Hing Oyster Sauce established in 1950s, remembered the oyster extract was in light brown and less starchy.  He ventured to remake the authentic taste the 1990s, this "golden cap" oyster extract he produced is full of oyster's umami flavour and fragrance.  It contains only oyster extract but no other ingredients, a much more healthier option.
